Legend has it that the inspiration behind Tagliatelle was drawn from the hair of Lucrezia Borgia (daughter of Pope Alexander VI), and was made by a talented court chef especially for her wedding with Duke Alfonso d’Este. Tagliatelle is 5mm wide and very similar to Fettuccine. The texture is unique in that it’s porous and rough, making it ideal for thick sauces, generally made with beef, veal or porkm as well as several other less rich and more vegetarian options such as briciole e noci (with breadcrumbs and nuts), uovo e formaggio (with eggs and cheese) or simply pomodoro e basilico (with tomatoes and basil).

Bring a large pot of lightly salted water to a boil, then add tagliatelle and cook for 4-5 minutes. Take out the tagliatelle to rinse under cold water. Finally, drain your tagliatelle with a colander.
